Ericka Carlson is a private chef and educator who is
delighted to be teaching in her native Oregon. She started her culinary
career catering and working with a private chef in Los Angeles teaching
private classes for corporations and individuals. She then attended
the Culinary Institute of America in New York. After catering for
several years in New York, she decided to return to Oregon where she
particularly enjoys working with the bounty of local ingredients we have
here in the Pacific Northwest. Her specialty is cooking from the source
using local, seasonal farm-fresh ingredients. Ericka's teaching style
is a hands-on approach designed to build confidence and encourage
experimentation by using the best ingredients and simple techniques to
let their true flavors shine.
