After graduating from culinary school, Gavin worked under Chef Marcus Samuelsson at Riingo in Midtown Manhattan, NY. He learned many aspects of restaurant life in New York, and realized he missed the Pacific Northwest, in particular Portland. Upon moving back in November 2004, he was hired as the lead line cook starting Five Spice, a restaurant in the heart of Lake Oswego. He now holds the title of Sous Chef at Five Spice, specializing in fusing the cuisine of his home in Hawai`i, with that of the Northwest.
