His cuisine is inspired by the region’s bounty and draws upon local and seasonal products. Join Cory as he demonstrates the dishes that have won him national acclaim.
Local Apple Salad with walnut, golden raisin and apple cider dressing and broiled radicchio
Warm Buckwheat Crêpe stuffed with chanterelles, Kabocha squash and goat cheese
Roasted Beef Loin with a warm wheat berry lentil ragout, bacon and wilted chard
