Hands On: Designing Desserts

 

 

With the building blocks you will learn in this hands-on class, you will be able to create hundreds of your own exquisite desserts.  You will learn how to bake a cake, make a cooked filling, and create ganache.  Then with some whipped cream and preserves, you’ll assemble some classic and contemporary creations.

 

Trifle

Layers of tender vanilla sponge, preserves, crème anglaise, and whipped cream, topped with luxurious swirls of white chocolate ganache

 

Bûche de Nöel

Chocolate sponge rolled with mocha pastry cream and covered with whipped dark ganache

 

Choconut Cake

Walnut torte layered with butterscotch filling and slathered with Milk chocolate ganache

 

Dark Tropical Torte

Dark chocolate cake and coconut pastry cream, glazed with dark rum ganache

 

Buttercup Cake

Mellow butter cake with tangy lemon curd and ginger-infused white chocolate ganache
