Hands On Exotic Holiday Buffet

 

Are you looking for that extra something to make your holiday gathering memorable?  Join Maya to create a delicious, visually stunning selection of dishes.  Spices and other exotic ingredients will dazzle your friends.  In this hands-on class, each student will participate in the preparation of at least three dishes.  The techniques in the class include:  preparing crostini, preparing fava beans, preparing a quick duck confit, roasting salmon, and preparing tortes.

 

Fava Bean Crostini

Creamy, vividly green fava bean paste on artisanal bread crisped with olive oil

 

Roasted New Potatoes with Watercress Aļoli and Tobiko

Crunchy, salty tobiko and pungently garlicky aļoli brighten earthy potatoes

 

Shiitake Mushroom Orzo with Truffle Oil

Luxurious truffle oil brings out the subtle flavor and aroma of shiitake mushrooms

 

Duck Confit with Date Balsamic and Cucumber Relish

Mellow balsamic sauce and cool cucumber relish accent rich braised duck

 

Roasted Salmon with Crisp Threads of Ginger, Leek, and Beets

The concentrated flavor and crisp texture of vegetable threads highlight salmon

 

Dark Chocolate Torte and Mandarin Ice Cream

 Opulent chocolate torte accompanied by the perfumed notes of mandarin oranges
