Hands On Modern Meze: Feasts of Little Plates
Join us to prepare a contemporary collection of Mediterranean little dishes. You will find many exciting tastes that will become new favorites. In this hands-on class, each student will participate in the preparation of at least three dishes. The techniques in the class include working with grape leaves, grilling kofta, working with filo dough, and baking a torte.
Grilled Feta-Stuffed Grape Leaves with Pomegranate Molasses Tangy homemade molasses with creamy, savory grape leaves will sharpen your appetite
Lamb and Pinenut Kofta with Spicy Tomato Chutney Toasted pinenuts add an extra dimension of texture to herbed lamb, intensified by the concentrated chutney
Individual B’stilla Tender, juicy chicken fills shatteringly crisp filo pastry
Shepherd’s Salad A complex blend of “gathered” greens and vegetables and rustic bread
Dukkah and Chickpea Salad Earthy chickpeas are highlighted by a complex homemade spice blend
Pistachio Torte with Quinces in Cardamom Syrup Supple quince slices bathed in cardamom syrup moisten rich, crumbly nut cake
