Hood River Bounty

with chef Heather Staten,

Rich Cushman of Viento Wines and

Bob Morus of Phelps Creek Vineyards

 

The Hood River Valley has long been known for its orchards, but its volcanic soils and long summer days also make it one of Oregon’s most exciting up-and-coming wine regions.  This class pairs local chef Heather Staten with winemaker Rich Cushman of Viento Wines and vigneron Bob Morus of Phelps Creek for a celebration of the food and wine of the region. Heather will demonstrate the cooking techniques of sauce-making, braising and pastry while Rich and Bob will talk about the new Columbia Gorge appellation and their wine-making and farming practices.

 

Two wines from each winery will be served with the meal.

 

A very rich Soup of Mussels, Saffron, Fennel, Spinach and Cream

 

Open-faced Tart with Golden Chanterelle Mushrooms, Bacon, Rosemary and Butternut Squash

 

Quail and Sausages Braised in Wine Grapes

Served with Crispy Polenta

 

Bitter Almond Bavarian with a Compote of Bosc Pears, Quince and Dried Cherries
