Puff pastry, the most elegant and sophisticated product in the bakers repertoire always adds luxury to any preparation in which it is used. It turns even the most humble preparation into party fare. The classic method for making puff paste is often intimidating for the home cook. In this class we will utilize a streamlined method for making puff pastry and we will manipulate the dough in exciting ways to create appetizers, main courses and desserts perfect for fall and holiday entertaining.

 

A spectacular bonus of this versatile pastry is that it actually benefits from freezing, a bonus as schedules become more frenetic near the holiday season.

 

Prosciutto and Goat Cheese Palmiers

A wonderful savory version of the palm-shaped pastry cookie with goat cheese and Prosciutto

 

Pailletes

Cheesy straws with a hint of cayenne are a crispy accompaniment to salad or soup

 

Beet, Basil and Mixed Green Salad

Pickled beets on a bed of mixed greens with a crumbling of goat cheese

 

Onion Tart Tatin

A savory upside down tart with caramelized onions and thyme

 

Turkey Potpie with Cornmeal Puff Pastry

Turkey, roasted sweet potatoes, carrots and parsnips with chanterelle mushroom sauce bubbles beneath a golden crust.

 

Pear Frangipane Turnovers

Autumn pears, dried cranberries and an almond filling encased in puff pastry
