Harvest Cuisine on the 45th Parallel
The 45th Parallel circles the earth approximately halfway between the equator and the North Pole. It runs right through the heart of the Willamette Valley AVA (American Viticultural Area), near Torino (Turin), Piedmont in Italy, and through both Burgundy and Bordeaux in France. All these areas have in common terrific terroirs for growing wine grapes and many of the same grapes are grown in these areas. They also share abundant agricultural riches and an emphasis on fresh, local produce and local, sustainably raised livestock.
Chef Carey will conduct three harvest classes stressing the similarities among these three areas and the Willamette Valley - featuring seasonal local Willamette Valley produce and locally raised game, lamb and wild-caught salmon. All meals will be served with Willamette Valley wines.
