Beyond Pho A Vietnamese Cooking Class by Diep Le To
A former tourism teacher at Hanoi Open University's Faculty of Tourism, Diep specialized in sustainable tourism while working for the Canadian Embassy in Hanoi, before working as a tour leader throughout Vietnam. With her encyclopedic knowledge of her homeland and its wonderful people, Diep works meticulously to create unique customized itineraries which capture the heart, soul and especially the flavor of Vietnam. Diep loves to spend her free time cooking. Her cuisine is based on freshness and the balance of Ying and Yang elements of the ingredients that she has learnt from her beloved mother. She also teaches cooking classes in Hanoi and is working on her first Vietnamese cookbook: Sisters Cook Book.
Appetizer The scent of green papaya Fresh green papaya and shrimp prepared with lime juice, Kinh Gioi herb and roasted peanuts on prawn crackers.
Main Course Hanoi Spring Rolls Ground pork mixed with glass noodle, perfume mushrooms and jicama, wrapped in rice paper and deep fried until golden brown, served with Vietnamese magical sauce.
Diep’s Tofu with Pork Fresh tofu cooked with pork in tomato and turmeric sauce flavored with scallion, star anise and cinnamon.
River Secret Fresh white fish marinated with galangal, fresh turmeric and fish sauce, pan- fried with fresh dill and scallion, served with rice vermicelli.
Dessert East meets West Caramelized fresh banana served with French vanilla ice-cream.
