Hands on: Easy as Duck Soup

 

If you love duck but find a whole duck intimidating, this class is for you!  You will learn how to cut a duck into separate parts and use them in a variety of Asian-influenced dishes.  In this hands-on class you will learn how to sauté and broil duck breasts, braise duck legs, and create a full-flavored duck stock, as well as a whimsical duck-themed dessert.

 

Grilled Duck Breasts on Watercress with an Orange-Sesame Vinaigrette

 

Braised Duck with Dried Cherries and Warm Spices

 

Duck Confit and Fresh Pineapple Salsa on a Pistachio-Rice Cake

 

Sautéed Duck Breasts and Pomegranate Reduction over Corn Pudding

 

Duck Soup with Asian Aromatics

Lemongrass, kaffir lime leaves, and galangal perfume rich duck stock

 

Chocolate Nests filled with Raspberries and Truffles
