Chocolate Obsession with Michael Recchiuti
Join Michael Recchiuti as he takes you from cacao bean to chocolate bar, with instructions on tempering and how to create stunning molded and hand-dipped chocolates as well as truffles so unusual you won't believe your senses. The evening will cover all the basics, including how to recover from a chocolate ‘disaster’. Class menu and techniques include Milk Chocolate malt Drink, Triple Chocolate Cookie, Burnt Caramel base, Hand-Tempering Chocolate, Ganache Making, Dipping and Rolling Truffles, Dark Chocolate Bark. Michael started his chocolate business in San Francisco in 1997 after a successful career at some of the top restaurants in Philadelphia. His chocolates were soon recognized for their sophistication and originality, and he is the only American ever to be invited to present his chocolates to the prestigious French chocolate society Le Club du Chocolat aux Palais. A light dinner will be served at the start of the class. Don't forget to have your copy of “Chocolate Obsession” signed by Michael.
