Perfect Pizza with Brian Spangler of Apizza Scholls
Brian Spangler, chef-owner of Portland’s favorite Apizza Scholls, is famous for his perfect pies. His pizzas have heavenly crusts, with textures ranging from crackly and flakey to soft and chewy, and only the most luscious toppings. Brian’s mission in life is to keep the craft of the pizziaolo alive and inspire others to do the same. In this class, he will teach you the most important factors in making a great pizza and how to control them: proper dough fermentation, oven management, and using the freshest, highest quality ingredients available. He will demonstrate his four most popular pizzas and more.
Classic Caesar Salad Whole romaine heart leaves, parmigiano-reggiano, home-made croutons, and a creamy dressing
Plain Pie The benchmark of a master pizziaolo, with tomato, whole milk mozzarella, flor di Latte, parmigiano-reggiano, grana padano, and extra virgin olive oil
Apizza Margherita With fresh garlic and basil
New York White Pie With ricotta, fresh garlic, and cracked black pepper
Tartufo Bianco Decadent with truffle oil
Cannoli With a filling of ricotta, mascarpone, pistachios, and a hint of orange and vanilla, and topped with chocolate
