Springtime Favorites from Tuscany
Spring is not only a beautiful time in the Tuscan countryside, it's also a time for cooks to celebrate the arrival of the first fava beans and asparagus, along with herbs, greens, and spring lamb. Allison and Amelia have put together a favorite Tuscan menu bursting with the fresh flavors of spring.
Baccelli al Pecorino A lovely antipasto salad combining fresh fava beans with cubes of young Pecorino cheese and fresh herbs in a light lemon vinaigrette
Risotto con Asparagi Arborio rice infused with a richly-flavored asparagus broth and served garnished with Reggiano Parmesan cheese and the tender asparagus tips
Agnello in Umido Spring lamb braised with white wine, fresh rosemary, and green olives, served over soft polenta
Torta di Ricotta A light, crustless ricotta cheesecake, flavored with citrus zest, golden raisins, and pine nuts
