Spring in Oregon with Benny Bettinger of Paleys Place
Enjoy this lavish spring menu prepared for you by Benjamin Bettinger, Chef de Cuisine of Paleys Place. Many of you will be familiar with Ben as he has assisted Vitaly Paley in a number of the classes he has taught at In Good Taste. Now it’s Benjamin’s turn to show us his skills and techniques as he cooks this menu that he devised especially for In Good Taste.
Benjamin Bettinger began his culinary career a little earlier than most; at the tender age of three, he was already assisting his mother in the kitchen with her bread baking, which prove to be an early indication of a lifelong passion for food. In 2001, Ben moved to Portland to attend professional cooking school. He interned at Paleys Place where Vitaly gave him the opportunity to further exercise the classical techniques her had mastered. He also learned how to combine the techniques with the very best of local, seasonal and organic produce. In 2004, Benjamin was promoted to Sous Chef which allowed him to develop as a leader in the kitchen and to practice his own menu creation, while developing strong relationships with local farmers and purveyors. Since that time, Paleys has been awarded many honors and Benjamin has been further promoted to Chef de Cuisine of Paleys Place.
