Our own home with its bountiful produce and vineyards of the Willamette Valley, Yamhill County and the fresh offerings of the coast has truly carved its own identity into the culinary world. Learn how to perfectly sear a scallop as well as halibut cheeks, working with skirt steak and the perfect spring crisp and vanilla ice cream.

 

Salad of Scallops, Proscuitto, Baby Greens and a citrus relish

Buttery scallops from the cold waters of the Pacific combine perfectly with Proscuitto di Parma and are accented by citrus

 

Springtime Asparagus Soup

A brilliant puree of asparagus soup with lemon zest and parmesan as a garnish.

 

Herb crusted Halibut Cheeks

seared and finished with a caramelized onion sauce and a bed of Arugula

 

Grilled Painted Hills Skirt Steak

A tender local cut of beef quickly grilled and accompanied by a anchovy and garlic sauce and braised baby artichokes

 

Rhubarb and Apple Crisp

A sweet and tart easy dessert with Oatmeal topping served with homemade vanilla ice cream
