Hands on Risotto Workshop
with Linda Carucci
Do
you love risotto, but find it challenging to prepare at home?
IACP's 2002 Cooking Teacher of the Year Linda Carucci
returns to In Good Taste to allay your fears and share secrets
to successful risottos as featured in her cookbook,
Cooking School Secrets for Real World
Cooks (Chronicle
Books, 2005), which was a finalist for a James Beard award and
the Julia Child First Book Award. Class begins with Linda
demonstrating the preparation of a classic risotto for all to
see and taste. She'll even show you how to make a simple
short-cut homemade chicken broth, the foundation for any great
risotto. Then we'll divide into groups and prepare several
variations of this incomparable Northern Italian specialty,
savoring each risotto to its fullest.
