Hands on: An Italian Spring Feast with Nancy Forrest
Spring is a time of celebration in Italy and a rebirth of the year. It brings an abundance of produce to Italy’s markets like a breath of fresh air. Lamb almost always finds its way to a feast. In this class, you’ll learn some classic Italian dishes like the centuries old Cassata Cake, grilled lamb chops and delicious focaccia for an appetizer.
Onion, Gorgonzola and Walnut Focaccia a delicious flatbread with a marriage of walnuts creamy gorgonzola and caramelized onions accompanied by a salad of baby greens
Roasted Red and Yellow Pepper Soup Velvety purees of both peppers served with shaved Pecorino Toscano Cheese
Grilled Lamb Chops Succulent Lamb chops marinated in rosemary, olive oil and balsamic vinegar and grilled to perfection served with roasted fingerling potatoes
Asparagus in Caper Garlic Sauce Blanched asparagus with a zesty sauce of the flavors of the Mediterranean
Sicilian Cassata Cake Layers of genoise filled with a cannoli-like filling surrounded with a chocolate glaze
