A Sustainable Easter Feast

 

You thought eating locally during early spring was going to be a restrictive challenge to your palate.  Our menus prove otherwise!  Come discover the quiet gems of the Oregon Garden.

In April, we will celebrate Oregon’s earliest arrivals: the first stems of asparagus, spring lamb, new garlic and toast to the season with sweet ice wine from the fall’s crush.  The perfect menu for an Easter feast.

Barb Randall will introduce you to April’s earthy comfort foods including:

 

          Tender Roasted Asparagus Wrapped in  Filo

 

          Aigo Bouido

Lightly Flavored Garlic Broth

 

          Pink Peppercorn Rack of Local Spring Lamb

 

          Roasted Asparagus with Oregon Morels

in Shallot Butter

 

          Spring Carrot Gnocchi

 

          Sweet Wine Syllabub

a dessert dating back to the Middle Ages, prepared with fresh whipping cream and sweet wine.
