Kaiseki Dinner with David Padberg
Learn how to make a special Japanese Kaiseki dinner under the expert guidance of David Padberg, Park Kitchen’s chef de cuisine. Kaiseki is a multi-course Japanese tasting menu.
David began his cooking career as a baker and pastry chef in 1994. After cooking in many US cities he traveled through Northern Italy, France and England on a working tour of Europe.
After returning to the United States in 2002, David moved to Portland to work with Cory Schreiber at Wildwood. The following year, he joined forces with his college friend, Jason Owens to create the Axis Supper Club. In late 2003, Morgan Brownlow recruited David as sous-chef to help open Clarklewis to widespread acclaim. In the spring of 2005, Scott Dolich hired David as chef de cuisine. They work together to create the menu at Park Kitchen and coordinate the restaurant’s special events.
David has since developed the restaurant’s whole animal butchery and charcuterie program to add more excitement to Park Kitchen’s menu, as well as the restaurant’s popular chef’s tasting menu. David made a culinary tour of Japan in 2006 and has hosted several seven course kaiseki dinners paired with sake, as well as featuring Japanese techniques on the daily menu at the restaurant. In March, David will represent the Oregon Department of Agriculture at Japan’s International Food Exposition. He also writes about food and agriculture on the internet.
