Vietnamese and Thai Spring Cooking with Robert Carmack
Robert Carmack resides in Sydney,
Australia, where he is a TV food stylist, and writer. He has
authored numerous cookbooks including: Vietnamese Home Cooking,
Thai Home Cooking, and multi-translated Fondue. Robert
also hosts tours of Asia through his popular website:
www.globetrottinggourmet.com and
www.asianfoodtours.com He
holds the coveted Grande Diplôme from the prestigious La Varenne in
France, and has worked for James Beard in New York and Anne Willan
in Paris. He was also a contributor to the acclaimed Time Life
series: The Good Cook. Robert grew up in the Northwest (from
Clark County, but says he feels like an Oregonian!), and has lived
abroad for some 35 years.
In this class, Robert will host a discussion and tasting of the traditional ingredients of Vietnamese and Thai cooking, including a tasting of various brands of fish sauce. Robert will also show you how to make red curry paste.
Although this is a demonstration class, you will have opportunities to participate in the preparation of the meal.
