Hands on Italian Techniques: Fresh Pasta

with Amelia Hard and Allison Bader

 

 

 

Join Allison and Amelia for three very special classes that will give you all the experience you need to create three of Italy's most glorious specialties in your own kitchen. Buon appetito!

 

In this class, Amelia and Allison will show you how easily you can make your own fresh pasta using the pasta-rolling attachment that fits onto the KitchenAid mixer (or using a hand-crank machine). 
You'll have a chance to roll out and cut the pasta, and you'll also learn how to fill and shape tortellini. We'll serve a generous antipasto platter before you start cooking and a salad and dessert after we've enjoyed our handmade pasta dishes.


Antipasti Misti: a mixed antipasto platter


Fettucine Verde con Salmone Affumicato
spinach pasta cut into wide noodles and tossed with smoked salmon and cream


Tonnarelli al Pesto di Olive
 square-cut pasta in an aromatic black olive pesto


Tortellini Bolognese
the classic meat-filled pasta of Bologna, served in a light sauce of butter, parmesan cheese, and black pepper


Insalata di Finocchi, Arancie, e Cipolle
a refreshing Sicilian salad of thinly sliced fennel bulb, orange segments, and sliced red onion

Pere al Forno
oven-roasted pears drizzled with a dark chocolate sauce
