a hands on class with Tim Healea
Learn the secrets to baking flavorful Artisan breads at home from award-winning baker Tim Healea. We’ll examine the specific steps of how to make good bread…it really is very simple…all that’s needed is some time, some basic ingredients, and some attention to a few essential details. You’ll make everything by hand –that’s right, no mixer. Learn how to make quality crafted bread at home…harness the fermentation process to develop great flavor and crumb and crust characteristics. You’ll also come away with an understanding of starters, how to make them and why to use them.
For more than eight years, the head baker at Pearl Bakery, Tim is currently overseeing the baking of bagels, ryes and desserts at Kenny & Zuke’s Delicatessen and developing his forthcoming bakery café, Little t, american baker.
He received the Tastemaker award from Food & Wine magazine, given to the top 35 people in food and wine under the age of 35, in 2004, and he was the silver award winner at the Coupe du Monde de la Boulangerie in 2002. He is also a board member of the Bread Bakers Guild of America.
