Cooking en Papillote 

 

Learn how to cook en papillote, a moist-heat cooking method in which your food is enclosed, usually in parchment paper, and cooked in the oven. This technique infuses foods with flavor and makes clean up a snap!  A variety of wrappers, including parchment, banana leaves, and banana peels, will be used and comparisons made regarding the effect they have in sealing in moisture and flavor. We’ve come a long way from the campfire foil wrapped dinner!

Parchment Purses of Scallops & Persillade Stuffed in Pattypan Squash

 

Whole Snapper in Banana Leaves with Grilled Pineapple Salsa

 

Herbed Potato Maximes

Sprigs of fresh herbs sandwiched between paper thin slices of potato, then brushed with clarified butter and baked to a golden brown

 

Caramelized Banana Tarts

With bananas cooked right in their peels
