Cooking with Fresh Herbs
A light and flavorful summer offering, this menu will help you become more confident in your use of fresh herbs. In this class, the techniques of storage, fabrication, and application will be explored using a dozen common, locally grown fresh herbs. You will learn to sear a rack of lamb, build a fresh herbal vinaigrette, and caramelize onions.
Dan Brophy is a Certified Executive Chef and a Certified Culinary Educator. He is an edible inner tidal specialist and has been a Master Gardener since 1992. Dan is also a mushroom forager and a grower and supplier of edible flowers, trick vegetables, herbs, fruits, wild mushrooms, and brown eggs.
