Hands On: Chocolate Pastries

 

Chocolate is wonderful to eat, especially if special care has been taken to bring out its best characteristics. In this hands-on class you will learn to prepare a show-stopping variety of gorgeous individual chocolate pastries, which would be wonderful for pampering a worthy friend or throwing a dessert party! You will cover techniques for European style tortes, chocolate and plain pâte sucrée, dacquoise, ganache, and baked chocolate filling. Class discussion will also include pairing of other ingredients with chocolate, the storage of chocolate, and percentages of cocoa mass.
