Hands On: A Vegetarian Feast, Looking East
Summer is full of family gatherings; make everyone welcome with this extravagant selection of delicious, satisfying dishes to be enjoyed by vegetarians and non-vegetarians alike. This menu is influenced by the flavors and techniques of Asia and it produces a visually stunning buffet comprised of brilliant, generous platters of tempting foods. In this hands-on class emphasizing seasonal and local produce, each student will participate in the preparation of at least three dishes. The techniques in the class include working with rice paper sheets, pan- and deep-frying noodles, marinating tofu, roasting and blanching vegetables, preparing a Thai curry, and preparing a crème Anglaise. Please note that eggs, but not dairy products, are included in some of the recipes.

Singapore-Style NoodlesPan-fried noodles and egg sheets finished with yellow curry and earthy vegetables
“Chinese Chicken” SaladAsian vegetables and savory marinated tofu tossed in a sesame dressing and topped with a cloud of bean-thread noodles
Jade VegetablesGreen beans, snow peas, and asparagus in a spicy tamarind dressing
Roasted Eggplant & Oyster MushroomsSlathered with tangy hoisin glaze
Thai Red Curry with Buttercup Squash & PineappleRich and complex and not too fiery, served with rice
Chocolate Cake with Coconut Crème Anglaise & Tropical Fruits
