Hunter’s Moon Wild Game Dinner

 

The lure of the Hunter’s Moon inspires this wild game dinner. This hearty menu offers an assortment of wild game items, including pheasant, wild boar, buffalo, and squab. You will learn techniques for selecting and preparing wild game.

 

Dan Brophy is a Certified Executive Chef and a Certified Culinary Educator. He is an edible inner tidal specialist and has been a Master Gardener since 1992. Dan is also a mushroom forager and a grower and supplier of edible flowers, trick vegetables, herbs, fruits, wild mushrooms, and brown eggs.

 

Smoked Pheasant Tostadas

 

Shredded Wild Boar with Thai Spices in Lettuce Cups

 

Wild Mushroom Bisque

Featuring white chanterelle and lobster mushrooms

 

Salad of Bitter Greens, Pinot Noir Poached Pears, Oregon Blue Cheese & Hazelnuts

 

Braised Buffalo & Squab with Hazelnut-Sausage Stuffing

Served with wild rice cakes and smoked winter squash
