You don’t have to travel to Louisiana to get a taste of the Big Easy. Adam Higgs, co-owner and Chef of Acadia, is dedicated to authentic recipes, and he has a way with seafood. In this class, you will learn his secrets to cooking fresh fish and shellfish. He will also take the mystery out of cooking a dark roux.

Seafood Gumbo

A blue crab, shrimp, and crawfish gumbo with andouille sausage, okra, and filé, all simmered in a very dark roux

Pan Bronzed Puppy Drum

Fish fillets with fried oyster dressing and a New Orleans hot sauce meunière

 

Paula's Gooey Butter Cake

Adam’s mother’s recipe and an Old South tradition—moist yellow cake with cream cheese layer finished with saffron-lemon sauce and whipped cream
