Seafood in the French Style with Pascal Sauton of Carafe Bistro
Last February, Pascal Sauton, co-owner and Executive Chef of Portland's Carafe Restaurant, beat out the competition to win the Oregon Seafood Chef Competition with his dish Oregon Salmon Effeuillee with Truffled Dungeness Crab Nage. This August, Sauton will serve as Oregon's ambassador at the Great American Seafood Cook-Off this in New Orleans, Louisiana. And just in time for the competition, this class is your rare chance to enjoy a menu inspired by Pascal’s award-winning dish.
A Parisian native, Sauton received his culinary training both at L'Ecole Hoteliere de Paris and the renowned three-star Michelin restaurant Lasserre in Paris. He spent time working at several top Parisian restaurants perfecting his education, then took his talents to Cayenne, French Guyana. Sauton moved to Portland in 1997 with his wife. The two opened Carafe, a Parisian-style bistro in downtown Portland, in August 2003.
