Hands on Seafood on the Grill

Join us to prepare a contemporary collection of grilled seafood dishes. Grilling is a quick way to seal in moisture, but seafood requires some finesse because it cooks so rapidly. The techniques in the class include grilling fish and shellfish, as well as preparing chutney, salsa, vinaigrette, and rice.
Oysters and Asian Pesto Grilled oysters with an Asian twist
Lemongrass and Lime Prawns over Coconut Rice
Wild Salmon Cakes with fresh Mango Chutney
Fish Tacos with Chipotle Salsa Grilled cod and crunchy vegetables in a soft tortilla with smoky salsa
Grilled Scallop Salad with Ginger-orange gastrique A reduction of rice vinegar, tangerine juice, and ginger dresses succulent scallops and greens
Ice Cream Sandwiches (served but not made in class) Vanilla Ice cream and lemon sorbet sandwiched between cardamom cookies
