Hands on Tuscan Feast
Tuscany is one our favorite places on earth: unique and varied landscapes, great villas, palaces and gardens and of course, its art. And then there is the wine, peppery olive oils, Chianina beef and an array of cheeses. In this class we will examine bringing together the simplest ingredients into the perfect combinations such as cantaloupe and salami, corn and risotto and fillet of beef with Arugula and olives. Come try your hand at rolling and tying a tenderloin of beef and making a free form tart shell that can be sweet as well as savory.
Shrimp on Garlic Crostini Perfectly sautéed shrimp accompanied by roasted peppers, red onions and a vinaigrette served at top a crisp crostini
Cantaloupe Salad Ripe melon tossed with white wine vinegar, extra virgin olive oil from Tuscany and topped with soppressata salami and goat cheese
Pan-Roasted Corn Risotto Learn the tricks of a fabulous risotto with sweet corn
Seared Beef fillet with Olives, Tomato and Arugula The mellow flavor of the beef is accented by the stronger flavors of the Arugula and olives
Plum and Red Raspberry Crostada This free form tart is filled with plums and raspberries and served with a lightly sweetened whip cream
The menu will be paired with Tuscan wines.
