Vindalho: Classic Indian dishes with a Mediterranean Splash with David Anderson
The focus in this class will be on the Goa region and the Portuguese-Indian connection that Vindalho is based on.
After wowing owner David Machado at Lauro with his talent and ability to run a kitchen, David Anderson and Machado put their heads together to come up with the concept for Vindalho, the modern Indian restaurant housed not too far from its sister establishment. Anderson took his knowledge of the inner workings of a professional kitchen and moved on down the street where you can find him wearing the hat of chef de cuisine at Vindalho.
Enmeshing himself in the world of Indian food was new to Anderson who quickly embraced the time-intensive and spice-heavy cooking style. He likes the challenge of translating this home-style cooking into appealing restaurant food. Anderson is committed to buying locally and was up to the challenge of integrating Northwestern ingredients into authentic Indian cuisine. Searching out genuine spices and herbs that comprise Indian food is another element of the puzzle that Anderson enjoys piecing together.
Snack: Pappadum and tamarind-date chutney
Salad: Summer melon chaat salad with red onions and mint
Appetizer: Goan mussel curry with coconut and chiles
Entree: Grilled pork tenderloin marinated in Vindalho spices with stir-fried green beans "thoren", peach-kalonji seed chutney and basmati rice
Dessert: Local Berry Kulfi- Indian "Ice cream"
