Hands On Galettes—The Free Form Tart 

 

Galettes are free-form tarts that are delicious savory or sweet. The crusts are entirely forgiving of misshapen circles and irregular edges. They can be made large or small, and individual-size galettes are perfect for holiday entertaining. And they’re so versatile, you can serve a galette as a first course, as a light entrée, or even as a vegetarian option. In the class, you will learn how to make the pastry from scratch and will have the opportunity to make your own personal galette.

 

Winter Squash Galettes

A sour cream and cornmeal pastry filled with roasted squash, garlic, and parmesan cheese

 

Caramelized Onion & Goat Cheese Galettes

Sweet golden onions and creamy goat cheese on pastry served alongside a salad of mesclun greens with balsamic vinaigrette

 

Savoy Cabbage & Mushroom Galettes

A main course galette of sautéed cabbage and roasted portabello mushrooms

 

Poached Pear Galette & Tahitian Vanilla Ice Cream

With a hint of orange and cinnamon
