Indian Spring Celebration
In celebration of the advent of spring, this menu incorporates the theme of the Festival of Holi, or the Festival of Color. Originally a festival to celebrate fertility and the harvest, today Holi is an excuse for Northern Indians to shed inhibitions for a day of spring fever and fun.
No other culture
has mastered the art of using herbs, spices, and aromatics like the
Indians. Learn about their various masalas, or spice blends, as you
enjoy the intoxicating perfumes and complex flavors in these dishes.
Spicy lamb
simmered in a sauce of green Indian herbs, including fenugreek leaves,
cilantro, and mint
Yellow lentils,
slow simmered with Indian spices
Aromatic rice
perfumed with golden saffron A sweet and sour accompaniment with Bengal Five Spice
A vegetable curry
incorporating the nine jewels of spring vegetables Saffron and cardamom scented ice cream
