Oregon Bounty Series Late Winter in the Pacific Northwest
The cool, wet weather of winter pushes us indoors but is perfect for growing succulent vegetables and earthy wild mushrooms. In this class, you will learn how to best prepare some of the state’s bounty, from tender asparagus to aromatic pears. The techniques you’ll learn in this class include preparing sabayon, poaching pork tenderloin, creating reduction sauces, preparing wild mushrooms, making pastry, and infusing cream.
