Andina The Best of Peruvian Cuisine

Ken Collura
Andina will present a four-course Peruvian
dinner and wine seminar for you. Passed hors d'oeuvres
will be followed by three savory courses and a dessert
done in both a traditional and novoandina style. Each
course will be paired with a wine from South America,
and detailed descriptions of each course and its paired
wine will be offered.
Wines to be poured will include a Torrontes, a Malbec/Bonarda Blend: a Malbec and/or Syrah from Argentina and a Carmenere and a dessert white from Chile.
Tiradito de Atun Ahi tuna, Aji Amarillo-tamarind vinaigrette
Causas del Mar Lobster, crab and octopus layered with potato puree
Pez Espada a la Criolla Grilled Hawaiian swordfish, lima bean stew
Magret de Pato Roasted duck breast with carrot sauce
Suspiro a la Limena Peruvian-style caramel meringue
