St. Honoré French Tarts With Dominique Geulin
Dominique Geulin, Master Baker from France, will be back to teach us the techniques of making delicious French tarts. Once you have mastered the basics, you can make a variety of wonderful desserts using the same techniques. In this demonstration class, Dominique will lead you through all the steps to making these sophisticated desserts.
Originally from Normandy, France where his family had a bakery for the past 30 years, Geulin is a second generation baker. He was awarded the Meilleur Ouvrier de France (M.O.F.) in baking in 1989 by late French President Francois Mitterand. The M.O.F. is France’s highest honor designed to preserve and promote craftsmanship pertaining to a long heritage of knowledge and artistry. Geulin is the only M.O.F. in the bread and rolls category to be baking breads and pastries in the United States.
St. Honoré Boulangerie was opened in December 2003. The baking techniques and original recipes provide a sense of back to the basics in opposition to modern fast pace methods.
A light meal will be served at the start of the class
Wine Pear Tart Pears poached in red wine surrounded by cinnamon custard and baked in a pate sablée shell.
Tarte Tatin Baked apples dripping with caramel supported by a crisp bed of puff pastry.
Bon Accueil A Normandy favorite of chopped apples topped with a slivered almond streusel baked in a flaky pate brisée shell.
Dominique will be teaching these basic recipes with an emphasis on how you can expand these flavors to suit the seasons and your culinary desires!
