WINTER COMFORT FOOD FROM ITALY AND FRANCE with Amelia Hard & Allison Bader
For their winter classes this year, Allison and Amelia have put together some delicious dinners drawn from the traditional repertoire of small family restaurants in Italy and France. January’s and March’s menus feature Italian trattoria specialties, and February’s menu highlights some favorite French bistro dishes. All of these recipes are special enough to serve to guests, but they’re so easy to prepare that you’ll want to use them for family dinners, too.
French Bistro Favorites
Petites Quiches au Roquefort Delicate tartlets filled with a richly-flavored Roquefort custard
Salade Pastorale aux Herbes An unusual and delicious green salad combining frisée, leaf lettuce, radicchio, and arugula with leaves of fresh marjoram, basil, parsley, tarragon, dill, and mint
Gardiane A traditional beef stew from the Camargue region of southern France, flavored with oil-cured black olives, bay, thyme, garlic, and red wine
Clafoutis aux Poires A light crustless pear custard tart, with hints of vanilla and star anise
