Goa is situated in the west coast of India, near Mumbai. This beautiful coastal state was a Portuguese settlement till the early 1960’s and so its cuisine is greatly influenced by that. Their food is unique in flavor and style and their Pork Vindaloo is renowned all over the world!
Pork Vindaloo (Vin, meaning Vinegar and Aloo meaning garlic in Portuguese) Pork, marinated in a blend of spices, garlic and vinegar and then slow cooked in its juices "... perhaps the most famous Indian-Portuguese fusion dish; tender, crimson pork vindaloo ... served with sannas--plump, fluffy cakes of fermented rice".
