New Series!

Basic Foundations of Cooking

 

By popular demand, we are offering a series of basic cooking classes to get you started out right on your culinary quest. All classes will be taught by Michele Knaus, who has been teaching cooking classes for over 6 years. She is used to teaching beginners and will step you through each technique slowly to make sure you understand.

 

All classes will include some lecture to cover the fundamentals and then Michele will turn it over to you to cook the meal.

 

Hands on: Stocks and Soups

Basic Class I

A great foundation for many flavorful dishes - learn how to make chicken, vegetable and beef stock from scratch for amazing low-salt stocks and broths. You will make: Basic Stocks

Risotto with Wild Mushrooms

Roasted Sweet Potato Soup with Cumin

Rosemary and White Bean Soup

Date: Friday, March 2 at 6:00 pm

 

Hands on: Sauces and Dressings

Basic class II

Get a handle on the classic French sauces by making dishes like

Penne al Forno

baked pasta with Béchamel/Cheese sauce

Roast Pork Tenderloin with Madeira Sauce

Chocolate Torte with Crème Anglaise

Several salad dressings

Learn how to emulsify vinaigrettes

Hands on: Roasting and Sautéing

Basic class III

You will learn how to roast the Perfect Roast Chicken as Michele demystifies the process. You will also learn how to make delicious Pan-roasted Vegetables to accompany it. From the stovetop you will create Hazelnut-crusted Halibut and a Sauté of Fava Beans, Onions and Fennel.

Hands on: Baking Essentials

Basic class IV

What everyone with a kitchen should know about the oven! Make a Savory Cheese and Spinach Soufflé to impress your family and friends, bake a Creamy Cheesecake with Graham Cracker Crust, and make a delicious Chocolate Devils Food Cake layered with Creamy Chocolate Frosting.
