Hands On: Tropical Escape During a dreary, wet Oregon winter, we can all use a little more sunshine. Escape to an island paradise, if just for an evening, with Chef Ericka as your tour guide. You’ll start the evening with a tropical drink and, of course, Jamaican Red Stripe beer, and then you’ll cook your way through the islands. You’ll learn to cook shellfish, grill fish, create spice rubs, and balance the flavors in sauces and vinaigrettes. This is a great menu for entertaining.
