WINTER COMFORT FOOD FROM ITALY AND FRANCE with Amelia Hard & Allison Bader
For their winter classes this year, Allison and Amelia have put together some delicious dinners drawn from the traditional repertoire of small family restaurants in Italy and France. January’s and March’s menus feature Italian trattoria specialties, and February’s menu highlights some favorite French bistro dishes. All of these recipes are special enough to serve to guests, but they’re so easy to prepare that you’ll want to use them for family dinners, too.
ITALIAN TRATTORIA FAVORITES II Tortino di Gorgonzola Light and savory individual soufflés flavored with Gorgonzola cheese
Risotto Sforzesco A delicious Milanese risotto flavored with porcini mushrooms, sage, shallots, orange zest, and Parmigiano Reggiano cheese
Scottiglia A traditional Tuscan stew made with a mixture of meats (we’ll use chicken, lamb, pork, and sausage), simmered until very tender in red wine with tomatoes, herbs, and a pinch of hot pepper
Torta di Ricotta A delicate crustless ricotta cheesecake, studded with pine nuts and golden raisins, and flavored with hints of citrus zest, cinnamon, and nutmeg
