Cooking for Comfort: Slow Food-- Sweet and Savory with Marie Simmons
Join Marie Simmons, award winning cookbook author and cooking teacher as she warms up our kitchen with some of her favorite winter recipes. She tells us that February is the month she hunkers down and cooks to her heart’s content as she tries new recipes and tweaks old favorites. In this warm and inviting class Marie will share recipes and tips on techniques and ingredients as you feast on her delightfully delicious food and stories.
Marie is the author of a number of our favourite cookbooks including: Fig Heaven; The Amazing World of Rice; The Good Egg; Fresh & Fast, A to Z Bar Cookies, Puddings, Muffins, and Pancakes.
Bacon-wrapped Wine Poached Figs The "Fig Lady" returns. Nibble on a scrumptious bacon wrapped, red wine soaked dried fig while Marie catches you up on her delightful fig stories, and the versatility of this ancient fruit.
"Grilled" Romaine Hearts with Anchovy Vinaigrette A quick grill or sear in a hot skillet brings Romaine hearts to life. And, anchovies? You'd never guess. They dissolve in the dressing adding a pleasant, salty edge, without a trace of "fishiness". Marie will share other ways to use this often neglected and misunderstood ingredient.
Roasted Leg of Lamb with White Beans and Orange GremolataFragrant boneless rolled and tied lamb leg is stuffed with garlic, rosemary, fennel and salt paste and slowly roasted with aromatic vegetables and heirloom beans.
Winter Vegetable Stew with Moroccan Flavors A wintry blend of butternut squash, leeks, potatoes, root vegetables laced with Moroccan spices and sprinkled with preserved lemons. Marie will demo how to make preserved lemons with her neighbor's crop of Meyer lemons.
Chocolate Chunk Bread Pudding Served with vanilla bean whipped cream. One of the easiest recipes for bread pudding. Absolutely melt in the mouth luscious. We'll have a chocolate tasting and discuss the merits of one chocolate over the other.
