A Culinary Tour de France II with Chef Tom Hurley & Ken Collura, Sommelier
Join Tom Hurley as he takes you on another culinary tour around France. Tom is the executive chef and owner of Hurley’s Restaurant in Portland and recently opened a new Korean-French restaurant, Coupage, in Seattle.
Tom trained in classical French cooking at the French Culinary Institute in New York City.
Ken Collura, wine director and sommelier at Andina, has collaborated with Tom to pair wines from the region with the menu. Previously, he was the Head Sommelier at Bern’s Steak House in Tampa, FL, internationally recognized as having the world’s largest wine list. Ken also writes a nationally syndicated wine column "Winespeak" and writes about wine for portlandfoodanddrink.com.
During the class, Tom will describe the techniques he uses to create each dish; there are the foundations of his cooking. Ken will describe the wines to you and how he chose the wines to match the food.
