In this demonstration class, you will learn how to use quality and local cheeses for exquisite pastries and desserts. You'll also learn basic pastry techniques, including how to make great crusts and fillings, and how to work with custard mixtures. Tim will also cover selecting cheeses for flavor and texture.
For more than eight years, the head baker at Pearl Bakery, Tim is currently overseeing the baking of bagels, ryes and desserts at Kenny & Zuke’s Delicatessen and developing his forthcoming bakery café, Little t, american baker.
He received the Tastemaker award from Food & Wine magazine, given to the top 35 people in food and wine under the age of 35, in 2004, and he was the silver award winner at the Coupe du Monde de la Boulangerie in 2002. He is also a board member of the Bread Bakers Guild of America.
