Hands on French Brasserie - Left Bank with Chef Jeremy Niehuss
Bras · se · rie [bras-uh-ree; Fr. brasuh-ree] noun - a restaurant that serves beer, wine and hearty food in a casual, yet professional environment. Known for French fare, beer and casual atmosphere French brasseries represents a jubilant celebration of French culture and of course friends, family and community. Brasseries have become known for serving the classical French favorite dishes we have all come to love. And as the nights get longer and the days colder these hearty and warm dishes are perfect for a gathering of friends or a delicious family dinner. Come join us for a night of celebration and cooking as you enhance your culinary repertoire with these classic French Brasserie dishes. This class will focus on French cooking skills and techniques such as sautéing, searing, roasting, braising, sauce reduction and proper seasoning.
Marinated Olives French olives, herbs, citrus and olive oil Served, but not taught or demonstrated
French Onion Soup Caramelized onions, rich broth and gratin of gruyere
Escargots Provencal Escargots, basil-garlic butter, puff pastry
Sautéed Spinach Baby spinach, lardons and confit shallots
Steak Frites Rib eye, herb butter, French Fries, aioli
Skate Meunière Skate wing, brown butter, parsley, lemon
Salade de Auvergne Endive, Frisée, Apples, Blue de Auvergne Cheese, Walnuts and a Champagne Vinaigrette
Chocolate Soufflés with a Brandy Crème Anglaise Served, but not taught or demonstrated
