Perfect Sauces a hands on class with Brian Kerr of Mortons the Steakhouse
Dress up your meals with the addition of these vibrant sauces, taught to you by Brian Kerr of Mortons the Steakhouse.
Brian Kerr has been teaching cooking classes for the past 5 years. He began cooking professionally in 1986 after learning the basics at his mother's and grandmother's side. His first stint as an Executive Chef began in a pub in Corvallis, soon beginning work in restaurants and country clubs, a boutique hotel in Cannon Beach, and a summer in a Russian fishing camp. Brian loves to cook for his finicky kids, creating memorable meals for his family and friends and community.
Chutneys spicy pork satay with mango chutney (chutneys served but not made in class)
Hollandaise
Eggs Benedict with smoked salmon Velouté You’ll start with chicken stock and make a velouté to serve with pan-seared chicken
Pan-reduction Sauce
Served with roasted beef tenderloin

de arbol, and we’ll serve them with fish tacos.
