Pleasures of the Pacific Northwest a hands on class with Maya Klein
The Pacific Northwest offers a bounty of beautiful produce, even in winter! This menu presents some of our favorite products of the area in new interpretations. In this hands-on class Maya will guide you through techniques for using a variety of local ingredients, including making savory flans, searing steak, reduction sauce, roasting fish and vegetables, baking a cake, making ganache, and making a cream-based sauce.

Seared Painted Hills Ribeye steaks sauced with Oregon Cyder and Apples
Chestnut and Wild Mushroom Orzo with Washington Sheep’s Milk Cheese
Roasted Salmon with Krogstad Aquavit butter sauce
Roasted fingerling potatoes and Northwest herbs
Chocolate Cake stuffed with Hazelnut ganache, served with butterscotch sauce
