The Japanese Kitchen: a hearty, healthy winter Japanese dinner A Demonstration Class with Hiroko Shimbo
A Japanese dinner has long been known as an attractive, delicious and healthy dining choice in America. This healthy cuisine is not, however, limited to the sushi, sashimi or teriyaki dishes that are well known to most diners. There are many easy-to-prepare, delicious cooked dishes in the Japanese cuisine repertoire that, in combination, can make a wonderful meal. In this special class Hiroko Shimbo, an expert on Japanese cooking, the author of, The Japanese Kitchen: 250 recipes in a traditional spirit, an IACP finalist, and the recently published The Sushi Experience, a James Beard Foundation Asian Cookbook nominee, culinary consultant and trained sushi chef demonstrates kitchen techniques and specially selected Japanese dishes. She reveals the story and secrets of this fascinating cuisine. The demonstration includes basic techniques for key fundamentals such as preparing traditional Japanese cooking stock, important sauces and flavored broths, as well as appealing easily prepared complete dishes.
During the class Hiroko will present the history and cultural background of ingredients and preparations and provide guidance on Japanese dining etiquette. This unique cooking demonstration includes a tasting of all the dishes demonstrated and prepared during the event. In making these preparations Hiroko will use several artisan-made Japanese key staples that are now available for the first time in America. These very special traditional ingredients provide excellent flavor, aroma, color and nutritional value to all of the dishes prepared in this demonstration. Complete recipes are provided. The demonstration includes preparation of basic Japanese stock, dashi and other sauces and cooking broths; tender simmered pork belly in Japanese soy sauce and mirin; winter vegetable tempura with special tempura dipping sauce and grated daikon radish; beef braised in cedar vat fermented barley miso; rice and miso soup; and, sweet chilled sesame pudding.
